Shrimp and Veggie Skewers with Fresh Herb Marinade

Some people think of shrimp as a fancy meal you might have in a restaurant but these are really quick and easy to make at home. This lovely dish is not only packed with flavour, it’s also full of fresh ingredients that are good for you – we’ve flavored the shrimp with lots of garlic and herbs for a really tasty meal.

INGREDIENTS

  1. ½ bunch fresh coriander
  2. ½ bunch fresh flat-leaf parsley
  3. 2 garlic cloves, peeled
  4. 2 tablespoons olive oil
  5. 4 to 5 teaspoons red wine vinegar
  6. sea salt and freshly ground pepper, to taste
  7. 1 yellow courgette
  8. 1 small red onion
  9. 16 cherry tomatoes
  10. 450g large shrimps, peeled and deveined

  3. Food processor
  4. Measuring spoons
  5. Bowl
  6. Cling film
  7. 4 Skewers
  8. Pan with sides if using wooden skewers

PREPARATION

1. Start by making the marinade: cut off the thick stems from the parsley and coriander but leave the thin stems on. Blitz the coriander, parsley, and garlic in the food processor until coarsely chopped. Add the olive oil, vinegar, 3 tablespoons water and a small pinch of the salt and blitz.

2. Cut the squash and dice the onion into 1cm chunks. Put the onion, squash, cherry tomatoes and shrimp in a bowl and season. Add 2 tablespoons of the fresh herb marinade, and toss with your hands until everything is coated. Refrigerate for at least half an hour or up to 2 hours.

3. Turn on the grill to high. Line a baking tray with aluminum foil. Thread the shrimp and veggies onto 4 skewers, mixing up the order however you like.

4. Grill the skewers for 3 minutes, flip them over, and cook for 3 minutes more until cooked through. Remove to a serving board or platter and tuck in.
