Homemade Guacamole with Corn Chips

Guacamole is a great, quick and easy snack to rustle up when your mates are around. Just make sure your avocados are nice and ripe – this will make it a lot easier to scoop out the flesh and chop it up.

INGREDIENTS

  1. A small handful of mixed-colour cherry tomatoes
  2. ½-1 fresh red chilli
  3. A few sprigs of fresh coriander
  4. 1 ripe avocado
  5. 1 lime
  6. Baked corn tortillas

EQUIPMENT

  1. Chopping board
  2. Knife

PREPARATION

1. To make the guacamole squeeze a handful of cherry tomatoes on to a board. Finely chop up the flesh of ½ - 1 red chilli and a handful of coriander leaves, including the top part of the stalks.

2. Halve and stone the avocado, then squeeze it over a board so the flesh comes out of the skin. Discard the skin. Squeeze over the lime juice and chop everything together until fine. Taste and adjust the flavours if needed.

3. Serve in a bowl with baked corn tortillas on the side.
