Danny's Chorizo and White Bean Soup

I made my own vegetable stock and used the big white beans. I find that legumes in a jar are better than canned!

INGREDIENTS

  1. 2 x Chorizo sausage
  2. 1 x jar tomato paste
  3. 2 x jars of white beans
  4. 2 litres of Stock
  5. 3 cloves Garlic
  6. 1 x Onion
  7. Salt and pepper
  8. A pinch of paprika

PREPARATION

Dice the chroizo and fry this with the onion, garlic, pepper and paprika. Add the stock and beans and boil for about 10 minutes, then add the tomato paste. Simmer until the beans are soft and season to taste. I know that there are better recipes out there for this soup but believe me this was really easy to make and everyone enjoyed it! Please feel free to make any suggestions on how to improve on my recipe.
