Simple Grilled, Stuffed Peaches

Grilled, stuffed peaches with plain organic Greek yogurt topped with organic local granola, crushed candied Georgia pecans and a sprinkling of cinnamon.

This recipe was conceived after a round-trip road trip from New York City to Atlanta, Georgia with my husband, 4 children and Jack Russell Terrier. We brought home 2 bushels of peaches and 2 big bags of pecans after sampling the local goods!

INGREDIENTS

  1. Peaches (depending on how many you want to make)
  2. Organic Greek yogurt
  3. Organic pecans
  4. Cinnamon

PREPARATION

This breakfast / lunch / snack was prepared in a matter of minutes. Here’s how:

1. Rinse and dry peaches
2. Slice in half and remove pit
3. Scoop out a larger hole where the pit was using a melon baller or spoon (the more yogurt you want, the larger the hole)
4. Use a small amount of oil (extra virgin olive or grape-seed) to prevent sticking to grill
5. When grill is heated, cook peaches on fleshy side 5-6 minutes
6. Pop in freezer to chill for a couple of minutes, then add yogurt and topping

If you wanted something more decadent you could also serve the grilled peaches as a dessert straight off the grill with a scoop of vanilla frozen yogurt drizzled with a minuscule amount of real maple syrup.
