Minted Arugula Salad

INGREDIENTS

  1. Two handfuls of arugula
  2. 1 handful of mint leaves, torn
  3. 1 lemon
  4. 2 tablespoons of olive oil
  5. Salt and pepper to taste

PREPARATION

Divide arugula and torn mint onto two plates. Zest the lemon into a small bowl, add the juice, olive oil, and seasonings. Whisk well and pour over greens.
