  • Pea and Broad Bean Puree Crostini

Crostini is basically the Italian way of saying "beautiful things on toast". They’re a fantastic alternative to offer at a party or at the beginning of a meal instead of canapés, especially if you offer a few different toppings. Image © David Loftus

  • A Cracking Burger

There’s nothing better than a homemade burger. Everyone loves them, they’re easy to make and, if made with quality, fresh ingredients (and not over laden with greasy stuff), they certainly don’t have to be unhealthy, especially if served with a salad. Once you’ve mastered this tasty basic recipe, you can make it your own with different herbs, spices and toppings. The sky’s the limit – that’s why cooking is so exciting. Image © David Loftus

  • All American Pancakes

You don’t need to visit your local diner or pancake house to enjoy a great weekend breakfast treat. This is the simplest and easiest recipe to remember and works brilliantly every time. It’s all made in one bowl too, which means less washing up – always a bonus! If you have any leftover batter it’ll keep happily covered in the fridge for a day or two. Image © Dan Jones

  • Baked White Fish with Olives and a Simple Tomato Sauce

The most important thing to remember with this recipe is to buy good-quality fish from your local fishmonger or supermarket. The recipe I’ve given you here can be used with all sorts of dishes, you can try using it with anything from pasta to grilled chicken. If you want to save some time, double the quantities and freeze half of the sauce or pop it in the fridge for up to a week. Image © Matt Russell

  • Barbecued Chicken

Everyone loves barbecued chicken. It’s a feature of pretty much every barbecue all over the country. Here’s how to make it crisp on the outside and cooked in the middle, just the way it should be. Image © Matt Russell

  • Basic Pizza

This is a really simple method for pizza dough and a great place to start if you’ve never made your own bread before. If you can find semolina flour, it gives the dough an authentic flavour and texture. But if you can’t find it, strong white bread flour will also work. Image © Matt Russell

  • Berry Ice Cream

Making your own ice cream is so quick and easy, and healthier too. I’ve used yoghurt, instead of cream, which is a lot less indulgent but just as tasty. Image © David Loftus

  • Best New Potatoes

A boiled potato seems so simple, and it is, but it’s also delicious, filling and good for you. Just a little bit of butter or olive oil and some fresh herbs, and you’ve got yourself a tasty side dish to accompany almost any meat or fish dish. Image © David Loftus

  • Brilliant Broccoli

Broccoli sometimes it gets a bad rap but, like anything, if you give it a bit of love and cook it just right, it's going to taste delicious – a little bit of butter and some salt and pepper make this a perfect side for practically any dish. Image © Matt Russell

  • Caesar on the Lighter Side

I've made up my own version of the classic Caesar salad which is a little bit healthier on the dressing - it's all about taking influences from the original dish and bigging up the falvours and textures where you can. If you have some leftover roast chicken, adding it to this salad is a great way of using it up. Image © Dan Jones
