  • Creamy Pumpkin and Cashew Nut Soup

    When I received my Food Revolution box of seasonal veggies, the most beautiful looking pumpkin hurled itself at me when the delivery guy fell up the stairs. So I went with it and created this creamy, pumpkin and cashew nut soup. The toasted cashews and fried parsnip chips are positively to die for. If you have a nut allergy, you really don’t need the nuts, just add the cream, and if you’re vegan, then lose the cream and up the nuts. What an amazing cause, we are so proud to be part of it.
