  • Chicken Fajitas with Homemade Guacamole and Salsa

    A griddle pan gives the nice, charred effect you want with fajitas, but you can also use a large pan or wok. If you use a griddle pan keep the ingredients moving about so that nothing burns or sticks to the bottom. Normally I wouldn’t recommend adding extra oil to a hot pan, but in this case it’s good to give everything a drizzle now and then so the chicken and peppers stay nice and shiny. Image © David Loftus

  • Larb Gai (Thai Chicken Salad)

    My friend from Thailand taught me her original Thai recipe. I have since added extra vegetables to it to make it healthier. We cook together every Thursday and always make fresh homemade food and enjoy friendship and family. It is our little tradition. The photo here is without the extra veggies I add the bell pepper and tomato. The tomato gives it a richer broth.

  • Spring Vegetable and Chicken Stir Fry

    With a great variety of spring vegetables at the Farmers Market, I’ve been making a lot of stir fry recipes. I don’t have a wok but a frying pan works well too. The beauty of this recipe is its simplicity and versatility. Use any combination of veggies and add either uncooked or leftover chicken, beef, pork or fish. (If already cooked, incorporate at the end.) Then add whatever seasoning you like. Here, the leeks, onions, mushrooms and garlic hold so much flavor that little more is needed.

  • Chicken karrahi

    Chicken Karrahi is a chicken cooked in wok..a wok is a karrahi. Its a popular Pakistani dish and is enjoyed with groups of people - a must have item for dinner parties. The small cafes on our national highways serve this dish to people who are travelling and take a break to have their lunch or dinner. It is served with naan bread and a raita.

    I'm in love with spices. The Fenugreek seed is one of those spices that isn't commonly used in baking, but my take on this dish would definitely please anyone's taste buds. Happy Baking :)
